This is my secret chili recipe. The secret is… its cooked in the microwave! They will think you worked all day when in realty, it only takes about 1 hour from start to finish. I have fooled many people with my chili and It taste great!
Microwave Chili
Ingredients: (yields 7 cups)
1 pound ground beef
1 medium onion, coarsely chopped
1 green pepper, coarsely chopped
1 red pepper, coarsely chopped
1 clove garlic, minced
1 (16 oz) can tomatoes, undrained
1 (16 oz) can kidney beans, drained
1 (6 oz) can tomato paste
½ cup water
2 tablespoons chili powder
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon pepper
- Brown beef in medium frying pan. Scoop out beef and drain on paper towels leaving drippings in pan. Add onion and peppers to same frying pan. Sautee until almost soft.
- Combine beef, onions, and peppers in a 3 qt. or large casserole microwave bowl.
- Add all remaining ingredients and mix well.
- Cover with casserole lid or heavy-duty plastic wrap.
- Microwave at high for 10 minutes, then stir.
- Cover again and microwave at medium (50% power) for 30-35 minutes.
Serve topped with cheese, scallions, hot sauce, sour cream, and whatever else you choose. Add you favorite topping.
