Chili

This is my secret chili recipe. The secret is… its cooked in the microwave! They will think you worked all day when in realty, it only takes about 1 hour from start to finish. I have fooled many people with my chili and It taste great!

Microwave Chili

 

Ingredients: (yields 7 cups)

1 pound ground beef

1 medium onion, coarsely chopped

1 green pepper, coarsely chopped

1 red pepper, coarsely chopped

1 clove garlic, minced

1 (16 oz) can tomatoes, undrained

1 (16 oz) can kidney beans, drained

1 (6 oz) can tomato paste

½ cup water

2 tablespoons chili powder

½ teaspoon ground cumin

½ teaspoon salt

¼ teaspoon pepper

 

  1. Brown beef in medium frying pan. Scoop out beef and drain on paper towels leaving drippings in pan. Add onion and peppers to same frying pan. Sautee until almost soft.
  2. Combine beef, onions, and peppers in a 3 qt. or large casserole microwave bowl.
  3. Add all remaining ingredients and mix well.
  4. Cover with casserole lid or heavy-duty plastic wrap.
  5. Microwave at high for 10 minutes, then stir.
  6. Cover again and microwave at medium (50% power) for 30-35 minutes.

Serve topped with cheese, scallions, hot sauce, sour cream, and whatever else you choose. Add you favorite topping.
